This is kind of a hard question to answer because I pretty much just feel it out, using reference and adjusting it where I feel like it. There’s so many different ways to draw an animal, whether it’s extremely cartoony or more realistic, and it really just depends on the look you prefer or need.
In the past I’ve leaned more towards simplifying and exaggerating the kawaii factor but it can still be recognizable as the intended animal, so I wouldn’t worry too much about anatomical correctness and focus more on making it cute and fun to look at. As long as you stick to the basic anatomy (ex rabbits have long ears, foxes have a narrow snout, birds have wings and not hands, etc) it should be fine.
If you’re trying to stick to a more realistic look but want to up the cute factor, try to pay attention to what makes it cute. Look up lots of references of the animal and determine which images are cuter and why. Face shape, eye size, body proportions and etc. all play a part. Try to incorporate it.
